At this time of year I make a huge pot of soup that lasts for most of the week. I do not really follow a recipe, and it is usually different each time. But I will give you the general guidelines that I follow, and I urge you to be courageous and try whatever variation you like. At the end of the day it is all pureed vegetables, so it cannot really go too far wrong!
This week I had roasted a chicken for Thursday’s dinner, so I boiled the leftover carcass in water and a little drop of vinegar, as this helps release the nutrients from the bones, for about 3/4 hour. This left me with a flavoursome health benefiting bone broth stock that gave extra depth to the soup. Bone broth is good for our digestion, immunity and provides calcium, magnesium and phosphorus while giving flavour to the soup. This reduces food wastage by using something that was going to go in the bin!
This quantity will make 7-8 adult portions. I bought plastic storage containers from the €euro shop and I portion the soup and freeze some while the rest will stay in the fridge for 4-5 days. When I go to the bother of making soup (although it really is no bother!) I feel that it is great value to bulk cook and freeze. One of the best investments I ever made was a chest freezer, it has made healthy eating very easy, as I bulk cook and freeze for healthy fast food!
