Sugar Free Cake????

Yes…. sugar free cake……. I am totally sugar free for almost 5 years, and I miss cake! So when I saw that I had 3 very black ripe bananas hiding in the press, I thought that I would love some banana bread. But I am also trying to reduce grains and I have used bananas in my sugar free cereal bars , which are definitely not as light as cake!!!!

So, I thought that I would experiment with ground almonds to see if I could make a successful sugar free cake, and I think that I have. In fact even my kids like it!!!!! Now, I have only made this once and I made the recipe up, but I have had no complaints and only empty plates……..

This sugar free cake is also paleo friendly, dairy free and naturally gluten free! Using ground almonds instead of flour also brings added nutrients and healthy fats, as almonds are full of monounsaturated fats (the same as found in olive oil). Monounsaturated fats are good for heart health and possibly lowering LDL cholesterol. Almonds also bring magnesium and potassium along with the antioxidant vitamin E. This sugar free cake uses very ripe (blackened skin) bananas for the sweetness, along with some delicious goji berries. Bananas are full of potassium, which may help with heart health and lowering blood pressure, along with vitamin B6 and fibre. More about banana health benefits here.

The other main ingredient in this sugar free cake is free range eggs. The eggs further increase the protein content of this cake. Eggs are an amazing source of protein, and are the most bio available protein for humans. I buy my free range eggs locally, and I find that the darker the yolk colour the better for health and flavour. The high protein content of this cake makes it a better choice if you are concerned about your blood sugar. It also makes it quite a filling cake despite the lightness, in fact I bring 2 or 3 pieces with me for a breakfast on the run with some of my homemade strawberry milk kefir.

As someone who has worked hard to become fully sugar free, I understand the difficulties in finding options for a sweet treat. I work with people who want to reduce their sugar intake due to diabetes, weight loss and overall health. But that does not mean that anyone should feel deprived. Hopefully this cake will be a winner for you!

Sugar Free Almond cake

Sugar Free Almond cake

Ingredients

  • 3 very ripe blackened bananas
  • 3 free range eggs
  • 2 bags of 180g Ground Almonds (360g)
  • Handful of whole almonds
  • Handful of goji berries (optional - or use any dried fruit)
  • 2 Teaspoons of Bicarbonate of Soda (baking soda)
  • 1/4 teaspoon of salt
  • sprinkle of flaked almonds for the top

Instructions

  1. Peel and mash the bananas in a large mixing bowl
  2. Add in the 3 eggs and mix with a fork
  3. Add the ground almonds, baking powder and baking soda and salt
  4. Mix with a fork and fold in the whole almonds and goji berries
  5. Turn into a lined tin, and sprinkle with flaked almonds ( I used swiss roll tin) at 180 degrees for approx 40 - 45 minutes, until golden brown and the centre springs back to the touch.
  6. Cool on a wire tray and cut into slices
  7. This freezes well as individual slices and can be a handy go to for a snack on the go or an elevense's treat.
